LCD – All Recipes, Salad
3 oranges peeled
1 grapefruit (pink skinned are nicer) peeled
6 mandarins peeled
1 small pineapple peeled
1 cup freshly squeezed orange juice
Freshly chopped mint leaves for garnish
(GF, DF, NF, V)
Nice served with coconut ice cream (see page 167).
Slice the citrus fruit into segments, removing membranes of skin.
Place into a bowl.
Core the pineapple, dice, and add to the bowl of citrus fruit and mix.
Add the orange juice and garnish with the chopped mint.
